Instructions
 

Preparation

  • Preheat your oven and line a baking dish with parchment paper.
  • In a large mixing bowl, whisk together almond flour, cassava flour, coconut sugar, cocoa powder, kosher salt, and baking powder until smooth.
  • If using, add ground coffee to the dry mixture and stir well.
  • In a separate bowl, melt the butter and combine with almond milk, vanilla extract, and eggs, whisking until smooth.
  • Gradually fold the wet mixture into the dry ingredients, mixing until just combined. Stir in the semi-sweet chocolate chips.

Baking

  • Pour the batter into the prepared baking dish and spread evenly. Optionally, sprinkle extra chocolate chips on top.
  • Top with a pinch of sea salt, if desired.
  • Bake in the preheated oven until set, about 25-30 minutes.
  • Let the brownies cool in the dish before transferring to a wire rack.

Notes

Ensure all ingredients are at room temperature for better mixing and texture. Don’t over-bake; brownies should remain fudgy in the center.
