Ingredients
  

  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp salt
  • 1/2 cup unsalted butter softened
  • 3/4 cup brown sugar
  • 1 large egg
  • 1 cup apple butter
  • 1/2 cup sour cream or Greek yogurt
  • 1 tsp vanilla extract

Instructions
 

  • Preheat oven to 350°F (175°C) and grease an 8-inch round or square baking pan.
  • In a medium bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt.
  • In a large bowl, cream butter and brown sugar until light and fluffy. Beat in the egg, then add apple butter, sour cream, and vanilla. Mix until combined.
  • Gradually add dry ingredients to the wet mixture and stir until just combined. Do not overmix.
  • Pour batter into the prepared pan and smooth the top.
  • Bake for 30–35 minutes or until a toothpick inserted in the center comes out clean.
  • Cool in the pan for 10 minutes before transferring to a wire rack. Dust with powdered sugar or top with cream cheese frosting if desired.
