Ingredients
  

Cake Batter

  • 2 cups diced fresh apples use a mix of Granny Smith and Honeycrisp
  • 1.5 cups all-purpose flour
  • 0.5 cup whole wheat flour
  • 0.75 cup brown sugar
  • 2 large eggs
  • 0.5 cup olive oil use a mild one
  • 1 tsp cinnamon
  • 0.5 tsp nutmeg
  • 0.5 tsp baking soda
  • 1 tsp baking powder
  • 0.5 tsp salt
  • 1 tsp vanilla extract
  • 0.5 cup milk dairy or almond

Caramel Sauce

  • 0.5 cup sugar
  • 2 tbsp butter
  • 0.25 cup cream
  • pinch of sea salt

Instructions
 

  • Preheat oven to 350°F (175°C). Grease or line a 9-inch round cake pan.
  • In a bowl, whisk flours, baking powder, baking soda, cinnamon, nutmeg, and salt.
  • In another bowl, whisk eggs, brown sugar, olive oil, vanilla, and milk until smooth.
  • Gently fold wet mixture into the dry mixture until just combined.
  • Add diced apples and fold in gently. Pour into the prepared pan and smooth the top.
  • Bake for 35–40 minutes or until golden brown and a toothpick comes out clean.
  • While the cake bakes, make caramel: melt sugar in a saucepan, stir in butter, then add cream and a pinch of salt. Stir until smooth and glossy.
  • Let caramel cool slightly. Drizzle over warm cake and serve.

Notes

To make it dairy-free, use almond milk and coconut cream. Cake is great the next day, and slices can be frozen individually.
