Instructions
Preheat oven to 350°F (175°C). Grease or line a 9-inch round cake pan.
In a bowl, whisk flours, baking powder, baking soda, cinnamon, nutmeg, and salt.
In another bowl, whisk eggs, brown sugar, olive oil, vanilla, and milk until smooth.
Gently fold wet mixture into the dry mixture until just combined.
Add diced apples and fold in gently. Pour into the prepared pan and smooth the top.
Bake for 35–40 minutes or until golden brown and a toothpick comes out clean.
While the cake bakes, make caramel: melt sugar in a saucepan, stir in butter, then add cream and a pinch of salt. Stir until smooth and glossy.
Let caramel cool slightly. Drizzle over warm cake and serve.
Notes
To make it dairy-free, use almond milk and coconut cream. Cake is great the next day, and slices can be frozen individually.
