Instructions
 

Preparation

  • Add the apple cider to a saucepan set over medium heat. Allow it to come to a boil before reducing the heat to a simmer. Cook, stirring occasionally, until the cider has reduced by half, about 20 to 30 minutes. Let cool.
  • Preheat your oven to 350 degrees Fahrenheit. Grease or butter a 9x5 loaf pan.
  • In a mixing bowl, combine room temperature butter and brown sugar. Beat until light and fluffy.
  • Add the egg and vanilla extract. Beat until well combined.
  • Add flour, apple pie spice, baking powder, baking soda, and salt to the mixing bowl along with the reduced apple cider. Stir gently by hand until just combined.
  • Pour the batter into the prepared loaf pan and spread it evenly.

Baking

  • Bake in the preheated oven for about 50 minutes or until a toothpick inserted into the center comes out clean.
  • Let the bread cool in the pan for 15 minutes before transferring it to a cooling rack.
  • While cooling, brush the top and sides of the bread with melted butter.
  • In a small bowl, mix sugar and cinnamon. Sprinkle liberally over the buttered bread.
  • Allow the bread to cool for one hour before slicing and serving.

For best results, ensure butter is at room temperature, avoid overmixing, and check bread doneness with a toothpick.
