Instructions
 

Preparation

  • Begin by lining a 9×5 loaf pan with parchment paper, allowing some overhang on both sides for easy release.
  • In a mixing bowl, cream together the softened butter and sugar until the mixture is light and fluffy.
  • Add in the eggs one at a time, beating well after each addition to ensure thorough blending.
  • In a separate bowl, whisk together the dry ingredients: flour, baking powder, and salt.
  • Gradually alternate adding the dry mixture and apple cider to the butter mixture, mixing until just combined.
  • Spray the loaf pan lightly with non-stick cooking spray. Transfer the prepared batter into the pan and smooth the top.

Baking

  • Place the loaf pan in the preheated oven at 350°F and bake for 40-50 minutes.
  • Check for doneness with a knife inserted into the center; it should come out clean.

Cooling and Glazing

  • Allow the cake to cool in the pan for about 10-15 minutes before carefully removing it from the loaf pan.
  • Let it cool completely on a wire rack.
  • To prepare the glaze, whisk together the sifted powdered sugar and apple cider until smooth, then drizzle over the cooled cake.
