Preparation

  • In a small bowl, combine the melted butter, flour, sugars, and cinnamon for the crumble and mix until crumbly. Chill the mixture while preparing the cake batter.
  • Preheat your oven to 350°F. In a small pot, boil the apple cider over medium-high heat and reduce to 1/2 cup. Set aside to cool.
  • Butter an 8-inch baking pan and line the bottom with parchment paper.
  • In a medium bowl, sift together the flour, baking powder, baking soda, salt, and spices.

Making the Cake

  • In a large bowl, beat together room temperature butter and both sugars until light and fluffy.
  • Add vanilla extract and egg to the butter mixture, stirring until well combined.
  • Mix in the cooled apple cider and Greek yogurt/sour cream until just combined.
  • Fold in the sifted flour mixture gently, followed by the chopped apples.
  • Spread the batter into the prepared baking pan and tap gently to reduce air bubbles.
  • Sprinkle the chilled crumble evenly over the top of the batter.

Baking and Glazing

  • Bake in preheated oven for about 25-32 minutes, checking for doneness with a toothpick.
  • Allow the cake to cool in the pan for at least one hour before adding the glaze.
  • For the glaze, whisk together powdered sugar, apple cider, and a pinch of salt until desired consistency is reached.
  • Drizzle the glaze over the cooled cake.
