Preparation

  • Grease a 9-inch springform pan with baking spray and line the bottom with parchment paper. Preheat the oven to 350°F.
  • For the crisp topping, combine the flour, oats, light brown sugar, granulated sugar, and cinnamon in a bowl. Add melted butter until crumbly and set aside.
  • Prepare the cinnamon sugar by whisking together light brown sugar and ground cinnamon, then set aside.
  • Peel and core the apples, cut them into small cubes, and toss with the granulated sugar and cinnamon mixture. Set aside.

Cake Assembly

  • In a bowl, whisk together flour, baking powder, and salt for the batter.
  • Beat the room-temperature butter with sugar and vanilla until creamy, then add eggs one at a time.
  • Incorporate sour cream into the mixture, then gradually add the dry ingredients until just combined.
  • Beat cream cheese with granulated sugar and vanilla until smooth, then add an egg and mix until cohesive.
  • Spread half of the cake mixture in the prepared pan, followed by half of the apple mixture and half of the cinnamon sugar.
  • Spoon the cheesecake mixture over the apples, layer with the remaining apple mixture, followed by remaining cinnamon sugar and cake batter, and top with the crisp topping.

Baking

  • Bake in the preheated oven for 70 to 90 minutes until a toothpick comes out clean. Tent with foil if the top browns too quickly.
  • Allow the cake to cool in the pan for 20 to 30 minutes before removing.

Finishing Touch

  • For the glaze, combine powdered sugar, milk, and vanilla in a bowl. Drizzle over the cooled cake.
