Instructions
 

Preparation of Streusel Topping

  • In a medium mixing bowl, combine the cold, cubed butter with 1 cup of all-purpose flour, 1 cup of light brown sugar, ½ cup of granulated sugar, and 1 teaspoon of ground cinnamon. Use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs. Set aside.

Preparation of Cake Batter

  • In a large mixing bowl, whisk together 2 cups of all-purpose flour, 3 teaspoons of baking powder, 1 teaspoon of cinnamon, and 1 teaspoon of salt.
  • In a separate bowl, mash the 3 ripe bananas until smooth.
  • In another bowl, cream together the ½ cup of softened butter and 1 cup of granulated sugar until light and fluffy.
  • Add the 2 eggs to the creamed mixture one at a time, blending well after each addition.
  • Mix in the 1 teaspoon of vanilla and mashed bananas until everything is combined.
  • Gradually add the flour mixture to the banana mixture, alternating with 1 cup of almond milk, beginning and ending with the dry ingredients. Stir until just combined.

Baking the Cake

  • Preheat your oven to 350°F and grease your baking pan.
  • Pour the cake batter into the prepared baking pan and spread it evenly.
  • Sprinkle the prepared streusel topping over the cake batter.
  • Bake the cake for 30-35 minutes until golden brown and a toothpick inserted in the center comes out clean.
  • Allow the cake to cool in the pan for about 10 minutes before transferring to a wire rack.
  • If making an optional glaze, mix 1 cup of powdered sugar with 1-2 tablespoons of almond milk until smooth and drizzle it over the cooled cake.

Notes

For the best results, use cold butter for the streusel, avoid overmixing the batter, and allow the cake to cool before adding glaze.
