Ingredients
  

For the crust

  • 1.5 cups finely crushed Nilla Wafers adds sweetness and structure
  • 4 Tbsp. melted unsalted butter provides moisture and binding

For the cheesecake

  • 2 8-oz. blocks cream cheese, softened creates the creamy base
  • 0.75 cup granulated sugar sweetens the filling
  • 2 cups heavy cream adds richness and a fluffy texture
  • 1 tsp. pure vanilla extract contributes flavor
  • 1 3.4-oz. package instant vanilla pudding mix thickens the filling
  • 1.75 cups whole milk hydrates the pudding mix
  • 5-6 large ripe bananas, sliced adds natural sweetness and moisture
  • 48 pieces Nilla wafers, plus more, crushed, for garnish for layering and decoration
  • Cool Whip or whipped cream, for topping adds a light finish

Instructions
 

Preparation

  • In a medium bowl, combine the finely crushed Nilla wafers, melted butter, and a pinch of kosher salt. Mix until the crumbs are evenly coated with the butter and press into the bottom of an 11x7 baking dish.
  • In a large bowl, beat the softened cream cheese with the granulated sugar using an electric mixer until smooth and fluffy.
  • Gradually add in the heavy cream and vanilla extract, continuing to beat until stiff peaks form.
  • In a separate medium bowl, whisk together the instant vanilla pudding mix and whole milk until well blended. Let it stand for about 5 minutes to thicken.
  • Gently fold the pudding mixture into the prepared cheesecake filling until well combined.

Assembly

  • Pour half of the cheesecake filling into the prepared crust, smooth it out evenly, then add a layer of sliced bananas and a layer of Nilla Wafers.
  • Pour the remaining half of the cheesecake filling over this layer and smooth it out again, adding another layer of sliced bananas and Nilla Wafers on top.
  • Cover the dish with plastic wrap and refrigerate for at least 2 hours, ideally overnight.

Serving

  • Top the chilled dessert with Cool Whip or whipped cream, and garnish with more crushed Nilla Wafers and banana slices before serving.

Notes

Use ripe bananas for optimal flavor and creaminess. Refrigerate overnight for the best results and slice with a sharp knife for clean cuts.
