Preparation

  • Preheat your oven to 350°F (175°C) and prepare your baking pan by lining a 9×13-inch dish with parchment paper for easy removal.
  • In a large mixing bowl, combine melted butter, brown sugar, and granulated sugar. Whisk until smooth and well blended.
  • Add the eggs and egg yolk to the sugar mixture and mix well until thoroughly combined.
  • Stir in the vanilla extract until evenly distributed.
  • In a separate bowl, whisk together flour, cornstarch, baking powder, and salt.
  • Gradually add the dry ingredients to the wet mixture, folding gently until just combined.
  • Fold in white chocolate chips and chopped walnuts, if using.
  • Pour the batter into the baking pan and spread evenly.
  • Bake for 20-25 minutes, or until edges are golden brown and center appears set but slightly soft. A toothpick should come out with a few moist crumbs.
  • Let cool in the pan for a few minutes before using the parchment to lift them out. Allow to cool completely on a wire rack before slicing into squares.

Notes

For best results, use room temperature eggs, avoid overmixing, and allow adequate cooling time for easier slicing. Store in an airtight container at room temperature for up to 3 days.
