Ingredients
  

Wet Ingredients

  • 3 ripe bananas mashed
  • 1/3 cup coconut sugar
  • 1/4 cup maple syrup
  • 1/2 cup non-dairy milk such as almond or oat milk
  • 1 tsp vanilla extract
  • 1 tsp apple cider vinegar
  • 1/4 cup coconut oil melted

Dry Ingredients

  • 1 3/4 cups oat flour certified gluten-free if needed
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp cinnamon ground
  • 1/4 tsp nutmeg ground
  • 1/4 tsp salt

Optional Mix-ins

  • 1/3 cup vegan chocolate chips plus more for topping
  • 1/3 cup chopped walnuts plus more for topping

Instructions
 

  • Preheat oven to 350°F (175°C). Line a 9×5-inch loaf pan with parchment paper and lightly oil the sides.
  • In a large bowl, mash the bananas until smooth. Add coconut sugar, maple syrup, non-dairy milk, vanilla, vinegar, and melted coconut oil. Whisk to combine.
  • Add oat flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Stir until just combined. Fold in chocolate chips and walnuts, if using.
  • Pour batter into the prepared loaf pan. Smooth the top and sprinkle extra chocolate chips and walnuts on top.
  • Bake for 60–65 minutes, or until a toothpick inserted into the center comes out clean. Cool in pan for 15 minutes, then transfer to a wire rack to cool completely.

Notes

Make sure to use very ripe bananas for best sweetness and texture. Let the bread cool fully before slicing to avoid a gummy center.
