  • 1 tsp dried parsley
  • 1 tsp Italian seasoning
  • ½ tsp paprika
  • ¼ tsp red pepper flakes Adjust for spiciness.
  • 1 tbsp Worcestershire sauce
  • ⅛ tsp black pepper
  • ¼ tsp kosher salt
  • 1 small onion, finely diced
  • 1 tbsp minced garlic
  • 1 cup plain breadcrumbs
  • 1 cup milk
  • 2 beaten eggs
  • 1 cup shredded cheddar cheese Adds richness and moisture.

Glaze Ingredients

  • ⅓ cup ketchup
  • 1 tbsp tomato paste
  • 3 tbsp brown sugar
  • 1 tsp apple cider vinegar
  • 2 tbsp sweet chili sauce
  • 1 tbsp mustard

Instructions

Preparation

  • Preheat your oven to 400°F. Prepare a rimmed baking sheet by lining it with parchment paper or lightly greasing it to prevent sticking.
  • In a large mixing bowl, gently combine the ground beef with dried parsley, Italian seasoning, paprika, red pepper flakes, Worcestershire sauce, black pepper, kosher salt, diced onion, and minced garlic.
  • Once well mixed, add in the plain breadcrumbs, milk, beaten eggs, and shredded cheddar cheese.
  • Form the meat mixture into a loaf shape and carefully transfer it to the prepared baking sheet.

Glazing and Baking

  • In a small bowl, mix together the glaze ingredients: ketchup, tomato paste, brown sugar, apple cider vinegar, sweet chili sauce, and mustard.
  • Coat the meatloaf with about half of this glaze mixture.
  • Bake the meatloaf in the preheated oven for about 45 minutes.
  • After this time, brush the remaining glaze over the top and return it to the oven for an additional 15 minutes.
  • Use a meat thermometer to check that the internal temperature has reached 160°F.

Resting

  • Once cooked, remove the meatloaf from the oven and let it rest for 10 to 15 minutes before slicing.

Notes

Allowing the meatloaf to rest after baking enhances moisture retention and flavor. You can prepare the meat mixture ahead of time. Adjust red pepper flakes for a spicier kick.
