Instructions
 

Preparation

  • Press a large piece of parchment paper into an 8×8 baking pan. Chill the pan in the freezer until firm.
  • Preheat your oven to 350°F (180°C).
  • In a mixing bowl, whisk together the brown sugar, granulated sugar, eggs, and vanilla extract until well combined and slightly frothy.
  • In a small saucepan over low heat, melt the butter and the chocolate chips together until smooth. Whisk in the cocoa powder thoroughly.
  • Combine the melted chocolate mixture with your egg and sugar mixture, mixing until uniform.
  • Gently fold in the all-purpose flour, espresso powder, and fine sea salt until just combined.

Baking

  • Pour half of the batter into the prepared pan and spread it evenly.
  • Place a frozen square of cookie butter on top of the batter.
  • Cover the cookie butter with the remaining batter.
  • Break up the Biscoff cookies and sprinkle them on top.
  • Drizzle some warm cookie butter over the top.
  • Bake for 30-40 minutes, checking for doneness.
  • Allow the brownies to cool in the pan before slicing.

  • Store any leftovers in an airtight container at room temperature.
