Instructions
 

Preparation

  • Preheat your oven to 350°F and line a baking sheet with parchment paper.
  • In a mixing bowl, whisk together the flour, baking powder, and salt.
  • In another bowl, combine the granulated sugar and egg yolks, mixing until pale and creamy.
  • Stir in the melted butter, vanilla extract, and almond extract into the egg yolk and sugar mixture.
  • Gradually add the flour mixture into the wet ingredients, mixing until just incorporated.
  • Gently fold in the sliced almonds.

Baking

  • Divide the dough in half and shape each part into a log about 12 inches long.
  • Place the logs onto your prepared baking sheet and brush with egg whites.
  • Sprinkle additional granulated sugar over the logs.
  • Bake for about 25-30 minutes until golden brown and firm.
  • Allow logs to cool for about 10 minutes on the baking sheet.
  • Slice the logs diagonally into ½-inch thick pieces.
  • Place the sliced biscotti back on the baking sheet and return them to the oven for another 10-15 minutes.
  • Let cool completely on a wire rack.

Notes

Biscotti can be enjoyed with coffee or tea, as snacks or desserts. Store them in an airtight container for up to two weeks.
