Instructions
 

Preparation

  • Preheat the oven to 350ºF (177ºC) and prepare your baking pan by lining it with foil, leaving some overhang on the sides.
  • In a mixing bowl, combine melted butter, granulated sugar, vanilla extract, salt, and lemon zest. Stir until well blended.
  • Gently fold in 2 cups of all-purpose flour until just mixed. Reserve ¾ cup of this mixture in the fridge.
  • Press the remaining mixture into the bottom of the prepared pan to create an even layer.
  • Bake the crust for 18 minutes or until lightly golden.

Prepare the Filling

  • In a clean mixing bowl, beat the cream cheese until smooth. Gradually add sugar and lemon zest, mixing until well combined.
  • Incorporate the eggs, yogurt, lemon juice, and salt, mixing until uniform. Gently fold in the ½ cup of flour, being careful not to overmix.
  • Gently fold in the blueberries.

Assembly and Baking

  • Once the crust has finished baking, pour the blueberry filling over the warm crust, evenly distributing it.
  • Sprinkle the reserved crumb mixture on top and return the pan to the oven.
  • Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean.
  • Cool on a wire rack before refrigerating for at least an hour.
  • Once chilled, lift the bars out using the foil and cut into squares.

Notes

These bars can be served at breakfast, as a snack, or as a light dessert. The combination of flavors is refreshing and delightful.
