Blueberry Filling

Instructions
 

Preparation

  • Begin by spraying a 9x13 glass baking dish with non-stick spray.
  • Preheat your oven to 350°F.
  • In a mixing bowl, combine the flour, sugar, salt, and cubed butter. Beat together until crumbly.
  • Set aside one cup of the crumbly mixture for topping.
  • Press the remaining mixture firmly into the bottom of the baking dish.
  • Bake for 10-12 minutes, or until firm and pale.

Filling

  • In a large bowl, whisk the eggs until well beaten.
  • Add the sugar, sour cream, flour, and salt. Mix until smooth.
  • Gently fold in the blueberries.

Assembly

  • Pour the blueberry filling over the baked crust.
  • Sprinkle the reserved crumbly mixture on top.
  • Return to the oven and bake for 1 hour, or until the top is lightly browned.
  • Allow the bars to cool for about 10 minutes before slicing.

Notes

For best results, ensure your butter is cold and consider adding vanilla extract for flavor.
