Peach Layer

  • 4-5 pieces peaches cored and cut into wedges, skin on

Preparation

  • Preheat your oven and prepare your cake pan by greasing it generously with butter.
  • In a mixing bowl, cream together the butter and sugar until light and fluffy.
  • Add the eggs to the butter-sugar mixture one at a time, mixing well after each addition.
  • In a separate bowl, combine the all-purpose flour, almond flour, baking powder, and cinnamon and whisk together.
  • Gradually add the dry ingredients to the wet mixture along with the water, folding with a spatula until thick and smooth.

Layering and Baking

  • Arrange the peach wedges evenly at the bottom of the greased pan.
  • Pour the batter over the peaches, ensuring they are completely covered.
  • Bake until the top is golden and a toothpick inserted in the center comes out clean.
  • Allow the cake to cool in the pan for a few minutes before inverting it onto a serving plate.
  • Let the cake cool to room temperature before serving.

Notes

Use ripe peaches for the best flavor. Ensure your butter is softened for easier creaming. Let the cake rest before inverting to maintain its structure.
