  • 3/4 cup Granulated Sugar Provides sweetness and helps structure
  • 1 1/4 cups Brown Sugar Adds depth of flavor and moisture
  • 1 tablespoon Vanilla Enhances overall flavor
  • 3/4 teaspoon Salt Balances sweetness
  • 2 whole Eggs Provides structure and moisture
  • 2 whole Egg Yolks Adds richness
  • 3/4 teaspoon Baking Soda Helps with rise and texture
  • 2 3/4 cups All-Purpose or Whole Wheat Pastry Flour Gives structure
  • 2 1/2 cups Semi-Sweet Chocolate Chips Adds indulgent sweetness and texture

Instructions

Preparation

  • Begin by preheating your oven. Grease a 9×13-inch baking pan with some cold butter, ensuring the entire bottom and sides are coated.
  • In a saucepan over medium heat, melt 1 1/4 cups of cold butter until it turns golden brown and has a nutty fragrance, about five to seven minutes.
  • In a mixing bowl, combine the granulated sugar and brown sugar. Pour in the brown butter and mix until smooth.
  • Add the tablespoon of vanilla and the 3/4 teaspoon of salt to the sugar-butter mixture and mix until glossy.
  • Incorporate the two whole eggs and the two egg yolks into the mixture, one at a time.
  • In a separate bowl, whisk together the 2 3/4 cups of flour and 3/4 teaspoon of baking soda. Gradually add this dry mixture to the wet ingredients, folding until just combined.
  • Gently fold in the 2 1/2 cups of semi-sweet chocolate chips.
  • Pour the batter into the prepared pan, spreading it evenly.

Baking

  • Bake the blondies in the oven for about 25 to 30 minutes until the edges are set and lightly golden.
  • Once baked, allow to cool in the pan for at least 10 minutes before transferring to a wire rack to cool completely.

Notes

Ensure that the butter is melted but not burnt for the best flavor. Allow the mixed batter to sit briefly before baking to enhance texture. Store at room temperature or refrigerate for longer freshness.
