Preparation

  • Preheat your oven and grease a baking pan gently.
  • In a large mixing bowl, whisk together the all-purpose flour, baking powder, granulated sugar, and salt.
  • In a separate bowl, mix the buttermilk and melted butter until combined.
  • Gradually pour the butter-and-buttermilk mixture into the dry ingredients, stirring gently with a spatula until just combined.
  • Fold in the diced peaches along with the peach juice or syrup.
  • Pour the batter into the prepared baking pan and smooth the top with a spatula.

Baking

  • Bake the cake in the preheated oven until golden brown and a toothpick inserted in the center comes out clean.
  • Allow it to cool in the pan for about 10 minutes before transferring it to a wire rack.

Frosting

  • While the cake cools, prepare the frosting by whisking together the powdered sugar, milk, and vanilla extract until smooth and creamy.
  • Once the cake has cooled completely, spread the frosting evenly on top.

Notes

For best results, drain canned peaches well and consider tossing them in flour before adding to the batter. If you prefer a thicker frosting, add more powdered sugar until desired consistency is reached. Store leftovers in an airtight container.
