Preparation

  • Preheat your oven to 350°F.
  • In a mixing bowl, combine the melted butter and brown sugar, whisking until smooth.
  • Add the eggs one at a time, mixing well after each addition.
  • Stir in the vanilla extract.
  • In a separate bowl, whisk together the flour, cornstarch, baking powder, and salt.
  • Gradually fold the flour mixture into the wet ingredients until just combined.
  • Gently fold in the butterscotch chips.
  • Grease or line your 9x13-inch baking pan with parchment paper.
  • Pour the batter into the prepared pan and spread evenly.
  • Bake for around 25 minutes, until edges are set and center is slightly soft.
  • Let cool in the pan on a wire rack before slicing.

Notes

Store blondies in an airtight container for up to three days. They can also be refrigerated for about a week or frozen for three months. Warm them in the microwave for a few seconds to reheat.
