For the Oat Crumble

  • 3/4 cup all-purpose flour provides structure

For the Cheesecake Filling

  • 2 packages 8oz cream cheese, softened creates a creamy filling
  • 1/2 cup granulated sugar sweetens the filling
  • 1 1/2 tablespoons all-purpose flour thickens the filling
  • 1 teaspoon vanilla extract enhances flavor
  • 1 large egg provides structure

For the Blueberry Layer

  • 2 1/2 cups fresh blueberries adds juiciness and sweetness
  • 1 tablespoon freshly squeezed lemon juice adds brightness
  • 2 tablespoons granulated sugar for sweetness in the blueberry layer
  • 2 tablespoons all-purpose flour thickens the blueberry topping
  • 1 tablespoon cornstarch stabilizes the blueberry filling

Instructions
 

Preparation

  • Preheat your oven to a suitable temperature, then prepare your baking dish by lightly greasing or lining it with parchment paper.
  • In a large mixing bowl, combine the oats, flour, light brown sugar, melted butter, cinnamon, and salt. Mix until crumbly.
  • Press half of the oat mixture evenly into the bottom of the prepared baking dish to form a crust.
  • In another bowl, beat the cream cheese and granulated sugar together until smooth.
  • Add the flour, vanilla, and egg to the cream cheese mixture and mix until fully integrated.

Assembly

  • Pour the cheesecake filling over the crust in the baking dish. Spread it evenly.
  • In a separate bowl, toss the blueberries with lemon juice, sugar, flour, and cornstarch.
  • Spread the blueberry mixture over the cheesecake layer, aiming for even distribution.
  • Sprinkle the remaining oat mixture over the blueberry layer.

Baking

  • Place the baking dish in the preheated oven and bake until the top is golden and the filling is set.
  • Once baked, let it cool at room temperature before refrigerating.

Serving

  • After chilling, cut into squares and serve. Enjoy!
