Ingredients

Main Ingredients

  • 1.5 lb ground beef
  • 1 cup breadcrumbs or crushed crackers Use whichever you prefer.
  • 1/3 cup ketchup Plus extra for glazing.
  • 2 eggs
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 8 oz shredded mozzarella Consider alternative cheeses for variations.
  • Chopped parsley Optional for garnish.

Instructions

Preparation

  • In a mixing bowl, combine the ground beef, breadcrumbs or crushed crackers, ketchup, eggs, onion powder, garlic powder, salt, and black pepper. Mix thoroughly by hand.
  • Lay out a piece of wax paper on a flat surface and shape the meat mixture into a rectangular shape, about 1-inch thick.
  • Evenly spread the shredded mozzarella over the surface of the meat mixture, leaving about a 1-inch border.
  • Roll the meat mixture into a log shape, starting from the edge with the cheese and rolling towards the other end, then pinch and seal the edges.
  • Place the rolled meatloaf seam-side down into a greased slow cooker.

Cooking

  • Cover and cook on High for 4 to 5 hours or on Low for 7 to 8 hours.
  • Glaze the top with additional ketchup during the last few minutes of cooking, if desired.
  • Broil the meatloaf for 3–5 minutes before serving for a caramelized finish, if preferred.

Notes

Serve with mashed potatoes or a fresh salad. Store leftovers in an airtight container in the refrigerator for 3-4 days. When reheating, slice and microwave or place in the oven until warm.
