Instructions
 

Preparation

  • Prepare the cherries: remove stems, pit them, and chop into small pieces.
  • Preheat your oven to 350°F. Line two muffin pans with paper liners.

Mixing

  • In a large mixing bowl, combine the dry ingredients: flour, sugar, cocoa powder, baking powder, baking soda, and salt. Stir well.
  • In a separate bowl, mix together the wet ingredients: sour cream, buttermilk, vegetable oil, beaten eggs, and almond extract until well combined.
  • Pour the wet mixture into the center of the dry ingredients and gently stir until just combined, being careful not to overmix.
  • Fold in the chopped cherries and dark chocolate chips using a rubber spatula.

Baking

  • Fill each muffin tin about halfway with batter.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 20-25 minutes.
  • Remove from the oven and allow muffins to cool on a wire rack.

Notes

For best results, ensure all ingredients are at room temperature before mixing. Consider sprinkling sugar on top before baking for a sweet crunch.
