Topping

  • cup granulated sugar For sweetness.
  • ¾ cup all-purpose flour Provides structure.
  • 1 teaspoon baking powder Acts as leavening.
  • ¼ teaspoon salt Enhances flavor.
  • ¾ teaspoon pure vanilla extract For flavor depth.
  • ½ teaspoon pure almond extract For a hint of nuttiness.
  • 6 tablespoons unsalted butter, melted Adds moisture and richness.

Serving

  • 1 scoop vanilla ice cream For creamy contrast.

Preparation

  • If using fresh cherries, pit and slice them, then place them in a mixing bowl. Ensure frozen cherries are thawed and drained.
  • Add 2 to 4 tablespoons of granulated sugar to the cherries, depending on their sweetness.
  • Add 1 tablespoon of freshly squeezed lemon juice, 1 teaspoon of pure vanilla extract, and ¼ teaspoon of pure almond extract to the cherry mixture. Stir gently.
  • Sprinkle 2 tablespoons of all-purpose flour over the cherry mixture and fold gently.
  • Pour the cherry mixture into a baking dish, spreading it evenly.

Topping

  • In a mixing bowl, combine ⅔ cup of granulated sugar, ¾ cup of all-purpose flour, 1 teaspoon of baking powder, and ¼ teaspoon of salt.
  • Add ¾ teaspoon of pure vanilla extract, ½ teaspoon of pure almond extract, and 6 tablespoons of melted unsalted butter. Mix until just combined.
  • Spoon the topping over the cherries in the baking dish.

Baking

  • Bake in a preheated oven at 350°F (175°C) until the topping is golden and juices are bubbling.

Notes

Allow to cool slightly before serving. Serve warm with vanilla ice cream for best results. This dish can be enjoyed as a breakfast, snack, or dessert.
