Ingredients
  

Crust and Topping

  • ½ cup unsalted butter, melted and cooled to room temperature adds richness and moisture
  • ½ cup granulated sugar sweetens the dough
  • 1 ½ cups all-purpose flour provides structure
  • ½ teaspoon baking soda helps the bars rise
  • ½ teaspoon baking powder contributes to a light texture
  • ¼ teaspoon salt enhances flavor

Cherry Filling

  • 2 cups fresh cherries, pitted and halved juicy and sweet filling
  • 1 Tablespoon cornstarch thickens the cherry filling
  • 1 Tablespoon lemon juice adds brightness
  • 1 teaspoon granulated sugar sweetens the cherry mixture

Instructions
 

Preparation

  • Preheat your oven to 350°F and grease or line your baking pan with parchment paper.
  • In a mixing bowl, combine melted butter and granulated sugar until well blended.
  • Gradually add the all-purpose flour, baking soda, baking powder, and salt to the butter-sugar mixture until a crumbly dough forms.
  • Reserve about one cup of the crumb mixture for later topping. Press the remaining dough into the bottom of the prepared pan.

Making the Filling

  • In another bowl, toss the halved cherries with cornstarch, lemon juice, and an additional teaspoon of granulated sugar.
  • Pour the cherry mixture over the crust in your baking pan.

Baking

  • Crumble the reserved dough over the cherry filling evenly.
  • Bake in the preheated oven until the top is golden and the cherry filling is bubbling, about 35 minutes.

Notes

Allow the bars to cool completely before slicing for clean cuts. Use fresh cherries for best flavor and texture. Don’t skip the cornstarch to prevent the filling from getting too watery.
