  • 4 large very ripe bananas, mashed (about 2 cups) Make sure bananas are very ripe for the best flavor and moisture.
  • 1/2 cup vegetable oil Adds moisture and richness.

Dry Ingredients

  • 1 cup white whole-wheat flour Basic structural role; combines with the following flour.
  • 1 cup all-purpose flour Basic structural role.
  • 1 teaspoon baking soda Leavening agent.
  • 3/4 teaspoon salt Enhances flavor.
  • 1/2 teaspoon baking powder Leavening agent.
  • 2 teaspoons ground cinnamon Enhances flavor.
  • 1/3 cup packed dark brown sugar Adds sweetness and flavor.
  • 2 1/2 tablespoons dark brown sugar, divided Additional sweetness.

Add-ins

  • 1/4 cup coarsely chopped walnuts, toasted Adds texture; toasting enhances flavor.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease a standard loaf pan.
  • In a mixing bowl, mash the ripe bananas until smooth (about 2 cups).
  • Add the vegetable oil and 1/3 cup of dark brown sugar to the mashed bananas, whisking until well combined.
  • Crack in the two eggs and add the vanilla extract, mixing everything thoroughly.

Mixing Dry Ingredients

  • In a separate bowl, whisk together the white whole-wheat flour, all-purpose flour, baking soda, salt, baking powder, and ground cinnamon.
  • Gradually add the dry mixture to the wet banana mixture, stirring gently until just combined.
  • Fold in the chopped toasted walnuts.

Baking

  • Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
  • Bake in the preheated oven for 60-70 minutes, or until a toothpick comes out clean.
  • Once baked, cool the loaf in the pan for about 10 minutes, then transfer to a wire rack to cool completely.

Notes

Enjoy it warm with butter or honey. Best if not sliced while warm to maintain texture.
