Cinnamon Apple Crumb Cake

Ingredients
  

For cinnamon streusel crumb

  • 1.5 cups flour
  • 0.5 cup brown sugar
  • 0.25 cup granulated sugar
  • 0.5 teaspoon salt
  • 1 teaspoon cinnamon
  • 0.25 teaspoon nutmeg
  • 0.5 cup butter (melted)
  • 0.5 teaspoon vanilla
  • 1 large tart apple (peeled and chopped) Use 2 small apples if needed.

For the cake

  • 4 tablespoons butter Should be at room temperature.
  • 0.5 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla
  • 0.5 cup sour cream
  • 1 cup flour
  • 0.25 teaspoon baking soda
  • 0.25 teaspoon salt
  • 0.5 teaspoon baking powder

Apple cider glaze

  • 0.5 cup powdered sugar
  • 1.5-2 tablespoons apple cider Adjust amount for consistency.

Instructions
 

Preparation

  • Preheat your oven to 350°F. Grease an 8-inch springform pan and line the bottom with parchment paper.
  • In a mixing bowl, combine the dry ingredients for the cinnamon streusel: flour, brown sugar, granulated sugar, salt, cinnamon, and nutmeg. Whisk until evenly mixed.
  • Add the melted butter and vanilla to the dry mixture and stir until crumbly.

Making the cake batter

  • In another bowl, cream together the 4 tablespoons of butter and 1/2 cup of sugar until light and fluffy.
  • Add the egg to the butter and sugar mixture, followed by vanilla and sour cream. Mix until smooth.
  • In a separate bowl, combine the flour, baking soda, salt, and baking powder. Gradually mix this dry mixture into the wet mixture until just combined.

Assembling the cake

  • Spread half of the cake batter evenly across the bottom of the prepared springform pan.
  • Place the chopped apples over the batter.
  • Sprinkle approximately 1 cup of the cinnamon streusel crumbs over the apples.
  • Spread the remaining batter over the layer of crumbs.
  • Top with the rest of the cinnamon streusel.

Baking and glazing

  • Bake for 35 to 40 minutes, checking for doneness with a tester.
  • Once baked, run a thin knife around the edge before releasing the springform ring.
  • To make the glaze, whisk together the powdered sugar and apple cider until smooth.
  • Drizzle the glaze over the cooled cake.

Notes

For best results, let the cake cool fully before glazing. Store leftovers in an airtight container.
