Preparation

  • Begin by melting the unsalted butter in a mixing bowl and letting it cool slightly.
  • Whisk in the brown sugar until well combined, creating a smooth mixture.
  • Add one large egg and one egg yolk to the butter and sugar mixture, then incorporate one tablespoon of vanilla extract. Whisk until smooth.
  • In a separate bowl, sift together the all-purpose flour, baking powder, salt, and cinnamon.
  • Gradually mix the dry ingredients into the wet mixture using a rubber spatula or a whisk, stirring until just combined.
  • In a small bowl, combine white sugar, cream cheese, heavy cream, powdered sugar, vanilla extract, and a pinch of salt. Whisk until smooth.

Assembly and Baking

  • Pour half of the blondie batter into a greased 8×8-inch baking pan. Spread it evenly across the bottom.
  • Spread the cream cheese mixture over the first layer of batter.
  • Dollop the remaining blondie batter over the cream cheese layer and swirl gently with a spatula.
