Instructions
 

Preparation

  • Preheat your oven to 350°F and grease a 9×13-inch baking pan or line it with parchment paper.
  • In a large mixing bowl, combine the melted butter and brown sugar, stirring until smooth and glossy.
  • Add the eggs and egg yolk to the bowl and mix well until fully integrated.
  • Stir in the vanilla extract until uniformly distributed.
  • In another bowl, whisk together the all-purpose flour, cornstarch, baking powder, and kosher salt.
  • Gradually add the dry mixture to the wet batter using a spatula, mixing until just combined.

Cinnamon Layer and Baking

  • For the cinnamon layer, combine melted butter, brown sugar, and cinnamon in a small bowl until it forms a smooth paste.
  • Pour half of the blondie batter into the prepared baking pan, spreading it evenly.
  • Drop spoonfuls of the cinnamon mixture over the first layer and gently swirl it into the batter.
  • Top with the remaining blondie batter and smooth it out gently.
  • Bake for about 30 minutes or until a toothpick inserted in the center comes out with moist crumbs.

Frosting and Serving

  • Allow the blondies to cool, then prepare the cream cheese frosting by beating softened cream cheese and butter until creamy.
  • Gradually add sifted confectioners' sugar, vanilla extract, and a pinch of salt, mixing until smooth.
  • Spread the cream cheese frosting over the cooled blondies and cut them into squares.
