Instructions
 

Preparation

  • Preheat your oven to 350°F.
  • In a mixing bowl, combine the flour, baking powder, salt, cinnamon, and pumpkin pie spice, whisking until well blended.
  • In a separate bowl, cream together the softened butter with the brown and white sugars until creamy and fluffy.
  • Add the egg, whole milk, and vanilla extract, and beat until fully incorporated.
  • Stir in the pumpkin until well combined.
  • Gradually add the dry ingredients to the wet mixture, beating just until combined.
  • Spread the batter evenly in a greased 9x9 inch baking pan.

Streusel Preparation

  • Prepare the streusel topping by mixing together the brown sugar, flour, and cinnamon until combined.
  • Add the cubed cold butter and blend until the mixture resembles small crumbs.
  • Sprinkle the streusel mixture over the top of the coffee cake batter.

Baking
