Dry Ingredients

  • 1 1/2 cups all-purpose flour for structure and texture
  • 1 teaspoon baking soda helps the bread rise
  • 1/2 teaspoon salt balances the sweetness
  • 2 teaspoons ground cinnamon for warm, aromatic flavor
  • 1/4 cup brown sugar for added sweetness and moisture

Instructions
 

Preparation

  • Preheat your oven to 350°F and prepare your loaf pan by greasing it with butter or oil.
  • In a mixing bowl, mash the ripe bananas until mostly smooth, leaving some lumps for texture.
  • Pour the melted butter into the mashed bananas, mixing until well combined.
  • Add the granulated sugar and beaten egg to the banana mixture, stirring until glossy and combined.
  • In a separate bowl, combine the flour, baking soda, salt, and ground cinnamon. Stir to ensure even distribution.
  • Gradually add the dry mixture to the wet mixture, blending gently until just combined.

Assembly

  • Pour half of the batter into the prepared loaf pan, spreading it evenly.
  • Sprinkle half of the brown sugar and cinnamon mixture on top of this layer.
  • Pour the remaining batter into the pan, smoothing the top, and swirl lightly with a knife.

Baking

  • Place the loaf pan in the oven and bake for 50-60 minutes or until a toothpick inserted comes out clean.
  • Once baked, let the bread cool in the pan for about 10 minutes before transferring to a cooling rack.

Notes

For best results, use very ripe bananas and do not over-mix the batter. Let the loaf cool completely before storing to maintain moisture.
