Preparation

  • In a mixing bowl, combine the cottage cheese, almond flour, cocoa powder, honey or maple syrup, chocolate protein powder, vanilla extract, and a pinch of salt. Mix until well integrated.
  • Taste the mixture for sweetness and flavor balance. Adjust using honey or protein powder if needed.
  • Prepare a small baking dish or pan lined with parchment paper or lightly greased. Transfer the batter into the prepared dish and smooth it into an even layer.
  • Optional: Sprinkle dark chocolate chips or chopped nuts over the top and gently press them into the surface.

Chilling

  • Place the baking dish in the refrigerator for at least an hour to firm up.
  • Once chilled, cut into bite-sized squares using a knife or spatula.
  • Store extra bites in an airtight container in the refrigerator.
