  • 1 tablespoon Cornstarch (for stability and texture)
  • 1 tablespoon Lemon Juice (to brighten the flavor)
  • 1/4 teaspoon Salt (to balance sweetness)
  • 1/3 cup Berry Coulis (for a fruity topping or sauce)

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the cottage cheese and sweetener. Blend until smooth.
  • Add in the eggs, almond extract, and vanilla extract. Beat until well combined.
  • Sift in the cornstarch and salt, then gently fold them into the mixture using a rubber spatula.
  • Pour in the lemon juice and mix it well with the batter.
  • Prepare your baking pan by greasing it lightly or using parchment paper.
  • Transfer the batter into the prepared pan and spread it out evenly.
  • Place the baking pan in the preheated oven and bake for approximately 30 to 40 minutes.
  • After baking, allow the cake to cool in the pan for about 10 minutes before transferring to a wire rack.

Notes

For best results, use full-fat cottage cheese, ensure ingredients are at room temperature, and avoid overmixing for a fluffy cake.
