Preparation

  • Measure out 1 cup of full-fat cottage cheese and place it into a mixing bowl. Use a fork or whisk to break down the cottage cheese curds slightly.
  • Add ¼ cup of natural peanut butter to the cottage cheese and mix well until fully incorporated.
  • Incorporate 2 tablespoons of sweetener into the mixture, blending until smooth.
  • Pour in 1 teaspoon of vanilla extract and, if desired, add ¼ teaspoon of salt. Stir until well mixed.
  • If the mixture seems too thick, add 1 to 2 tablespoons of milk or heavy cream to adjust its consistency.
  • Optional: Melt 2 ounces of dark chocolate chips with 1 teaspoon of coconut oil and drizzle over the mousse.
  • Serve the mousse in individual bowls and top with a sprinkle of chopped peanuts.

Notes

For best results, ensure your cottage cheese is smooth and well blended. Store leftovers in the fridge in an airtight container for up to three days. Garnish right before serving to keep peanuts crunchy.
