Ingredients
  

Base Ingredients

  • 1 cup unsalted butter softened
  • 2 cups sugar
  • 3 large eggs
  • 2 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tbsp orange zest freshly grated
  • 1/2 cup orange juice freshly squeezed
  • 2 cups fresh cranberries or frozen (not thawed)

Optional Add-ins

  • 1/2 tsp cinnamon optional, for warmth
  • 1/2 cup chopped nuts walnuts or pecans

Instructions
 

  • Preheat oven to 350°F (175°C). Grease and line your baking pan with parchment paper.
  • Cream butter and sugar until light and fluffy. Beat in eggs one at a time.
  • Whisk flour, baking powder, salt, and cinnamon (if using) in a separate bowl.
  • Mix in orange zest and juice with the butter mixture. Gradually fold in the dry ingredients until just combined.
  • Toss cranberries with 1 tablespoon flour to prevent sinking, then fold into the batter along with nuts if desired.
  • Spread batter evenly into prepared pan. Bake 35–45 minutes, or until a toothpick inserted comes out clean.
  • Cool completely before glazing or slicing.

Notes

Glaze with powdered sugar and orange juice for a sweet finish. These desserts keep up to 3 days in an airtight container, and flavors deepen over time.
