  • 2 cans sweetened condensed milk (14 ounces each) for creaminess and sweetness
  • 4 ounces cream cheese, softened to add a rich, smooth texture
  • 3/4 cup Key lime juice for a bright, tangy flavor

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine the graham cracker crumbs and granulated sugar.
  • Pour in the melted butter and mix until the crumbs resemble wet sand.
  • Press the crumb mixture evenly into the bottom of a 9x9 inch baking dish.
  • Bake the crust in the oven for about 10 minutes, or until slightly golden and set.

Filling

  • While the crust cools, combine sweetened condensed milk, softened cream cheese, Key lime juice, and lime zest in a mixing bowl.
  • Use an electric mixer to blend everything together until smooth and creamy.
  • Pour the filling over the cooled crust and spread it evenly.
  • Return the dish to the oven and bake for about 15-20 minutes, until the filling is set.

Cooling and Serving

  • Remove the pie bars from the oven and let cool at room temperature.
  • Refrigerate the bars for a few hours or until completely chilled.
  • Slice into bars and top with fresh whipped cream, if desired.

Notes

Make sure to soften the cream cheese before mixing to avoid lumps in the filling. Press the crust firmly into the dish to prevent it from crumbling.
