  • Combine the cream cheese and butter in a mixing bowl. Blend until smooth and creamy, ensuring no lumps.
  • Gradually add the powdered sugar, mixing until well incorporated and fluffy.
  • Incorporate the lemon zest into your cream mixture until evenly distributed.
  • Melt the white chocolate chips in a microwave or double boiler, stirring until smooth. Be cautious not to overheat.
  • Allow the melted chocolate to cool slightly before folding it into the cream cheese mixture.
  • If desired, add natural food coloring or a pinch of turmeric and mix until evenly distributed.
  • Refrigerate the mixture for about 30 minutes until firm enough to scoop.
  • Scoop small portions of the mixture and roll into balls, about one inch in diameter.
  • Place the formed truffles on a baking sheet lined with parchment paper.
  • Return the truffles to the refrigerator for at least 30 minutes to firm up further.

Notes

Ensure cream cheese and butter are at room temperature for easier mixing. Refrigerate longer if the mixture feels too soft to form truffles. Rolling in crushed nuts adds a nice texture contrast.
