Preparation

  • In a mixing bowl, combine the sourdough discard and extra virgin olive oil until well mixed.
  • Gradually add enough whole wheat flour until the dough comes together and is no longer sticky.
  • Turn the dough onto a floured surface and gently knead for a minute until smooth.
  • Roll out the dough using a rolling pin to about 1/8-inch thickness.

Baking

  • Preheat your oven to 350°F.
  • Transfer the cut crackers to a baking sheet lined with parchment paper and sprinkle with flaky sea salt.
  • Bake in the oven for about 20-25 minutes until golden brown and crispy.
  • Allow the crackers to cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.

Notes

Use fresh sourdough discard for optimal flavor. Adjust the thickness of the crackers based on your preference.
