Preparation

  • Preheat your oven to 325°F. Spray an 8-inch square baking dish with cooking spray, and optionally line with parchment paper.

  • In a large bowl, whisk the eggs, oil, and vanilla extract together until smooth.
  • Pour the dry ingredient mixture into the wet ingredients and stir gently until just combined.
  • Scrape the thick batter into the prepared baking dish, smoothing the top with a rubber spatula.

Baking

  • Bake for 40-48 minutes, checking with a toothpick for doneness in the center.
  • Once done, remove from oven and let cool in the pan for at least 30 minutes before slicing.
