  • 5 tablespoons water for moisture

  • 1 cup heavy cream for lightness and creaminess
  • 2 teaspoons vanilla extract for flavor enhancement
  • 1 tablespoon unflavored grass-fed gelatin powder for stabilizer
  • 3 tablespoons warm water to help bloom gelatin
  • 5 tablespoons monk fruit-stevia blend for sweetener

For the crust

  • ¼ cup chopped toasted pecans adds texture
  • 1 cup almond flour base texture
  • 3 tablespoons unsalted butter, melted binding ingredient
  • teaspoon maple extract additional flavor
  • ½ teaspoon monk fruit liquid sweetener added sweetness
  • ¼ teaspoon stevia liquid sweetener added sweetness
  • Pinch salt balances flavor
  • teaspoon vanilla extract flavor enhancement

For topping

  • ¼ cup toasted chopped pecans for texture and flavor

Instructions
 

Making the caramel

  • In a nonstick pan set over medium-low heat, add the granulated allulose and allow it to melt slowly, stirring occasionally.
  • Once it reaches your desired caramel shade, carefully incorporate the water and heavy cream while stirring continuously.
  • Add the salted butter to the mixture, mixing until it’s fully blended.
  • Remove the pan from heat and allow the caramel to cool, then refrigerate it overnight to thicken.

Preparing the crust

  • Combine almond flour and chopped toasted pecans in a mixing bowl.
  • In a separate bowl, mix the melted butter with maple extract, monk fruit sweetener, stevia, salt, and vanilla extract until well combined.
  • Pour the wet mixture into the almond flour mixture and stir until cohesive and crumbly.
  • Line a 6-inch springform pan with parchment paper and transfer the crust mixture, pressing it firmly to create an even layer.
  • Refrigerate the crust while making the cheesecake filling.

Making the cheesecake filling

  • Add the gelatin powder to a small bowl with warm water to bloom it.
  • Whisk the softened cream cheese until smooth and creamy.
  • Blend in heavy cream, vanilla extract, and monk fruit-stevia blend until uniformly smooth.
  • Microwave the bloomed gelatin for about 10 seconds if needed, then add it to the cream cheese mixture while whisking continuously.
  • Pour the cheesecake filling over the crust in the springform pan, tapping gently to remove air bubbles.
  • Refrigerate overnight until fully set.

Finishing touches

  • Carefully remove the cheesecake from the pan.
  • Pour the chilled caramel over the top, using a spatula to spread it gently.
  • Sprinkle toasted chopped pecans on top for added crunch and flavor.

Notes
