  • 1 kg mixed dried fruit
  • 600 ml chocolate milk
  • 2 cups self-raising flour

Instructions
 

  • Place the dried fruit in a large bowl, pour in the chocolate milk, and stir well. Cover and refrigerate overnight to soak.
  • Preheat your oven to 320°F (160°C). Line an 8-inch (20 cm) square cake tin with parchment paper.
  • Fold self-raising flour into the soaked fruit mixture until fully combined. The batter will be thick and sticky.
  • Spoon the mixture into the prepared tin and press it down gently to eliminate air pockets.
  • Bake for 2 hours. Then turn off the oven and let the cake sit inside for 30 minutes to set slowly.
  • Remove from the oven, cool completely in the tin, then slice and serve.

This cake is naturally dairy-adaptable — use almond or oat chocolate milk for a dairy-free version. Store tightly wrapped for freshness, and enjoy it over several days or freeze for later.
