For the Peach Filling

  • 8 large fresh peaches, peeled, pitted and sliced for sweetness and moisture
  • cup organic brown sugar adds depth of flavor

  • ½ tsp cinnamon adds warmth

For the Topping

  • 1 ½ cups all purpose flour for structure
  • cup organic brown sugar for topping flavor
  • cup organic sugar for topping sweetness
  • 1 ½ tsp baking powder helps with rising
  • ½ tsp salt enhances flavor
  • 1 stick Earth Balance® butter, cut into small pieces creates a tender crumb
  • cup boiling water helps bind the mixture
  • 4 tsp organic sugar for topping adds sweetness
  • 1 ½ tsp cinnamon for topping enhances flavor

Instructions
 

Preparation

  • Preheat the oven to 425°F.
  • Prepare the fresh peaches by peeling, pitting, and slicing them into manageable pieces. Transfer them to a large mixing bowl.
  • Sprinkle the brown sugar, organic sugar, cinnamon, corn starch, lemon juice, and nutmeg over the peaches. Gently stir until the peaches are evenly coated.
  • Pour the peach mixture into an ungreased 9 x 13 baking dish and spread it evenly.
  • Place the baking dish in the oven for 10 minutes.

Topping Preparation

  • In a medium mixing bowl, whisk together the flour, the first amounts of sugar, brown sugar, baking powder, and salt.
  • Use a pastry blender to cut the Earth Balance® butter into the flour mixture until it resembles a crumbly texture.
  • Slowly pour in the boiling water, stirring until just combined. It's okay to have some lumps.

Assembly and Baking

  • After 10 minutes, remove the baking dish from the oven. Gently dollop the prepared topping over the peach layer.
  • In a small bowl, mix the remaining organic sugar with cinnamon. Sprinkle this mixture evenly over the cobbler.
  • Return the dish to the oven and bake for approximately 35 minutes, until the top is golden brown.

Notes

Serve warm as a comforting dessert, or enjoy leftovers for breakfast. Pair with dairy-free vanilla ice cream for an indulgent treat.
