Instructions
 

  • Step 1: Preheat oven to 350°F (175°C). Grease a 9x13-inch baking pan.
  • Step 2: In a large bowl, whisk sugar, eggs, oil, and vanilla until pale and glossy.
  • Step 3: In a separate bowl, whisk flour, cinnamon, nutmeg, baking soda, and salt.
  • Step 4: Add the dry mixture to the wet ingredients and stir until just combined.
  • Step 5: Fold in chopped apples and pecans. The batter will be thick.
  • Step 6: Pour into the prepared pan and smooth the top. Bake for 50–55 minutes or until a toothpick comes out clean.
