Preparation

  • Preheat your oven to 350°F.
  • In a mixing bowl, combine the softened butter and powdered sugar until light and fluffy.
  • Gradually add the flour and salt to the butter-sugar mixture. Mix until combined.
  • Press the dough evenly into the bottom of a greased 9x13 inch baking dish.

Baking the Crust

  • Bake the crust for about 20 minutes, or until lightly golden around the edges.

Making the Filling

  • In a separate bowl, whisk together the eggs and granulated sugar until smooth and slightly frothy.
  • Add the lemon juice and lemon zest to the egg mixture, and stir well to combine.
