Preparation

  • Start by placing the softened cream cheese into a mixing bowl. Using an electric mixer, blend the cream cheese until smooth and fluffy, about 1 to 2 minutes.
  • Gradually add the powdered sugar while mixing on low speed. Once incorporated, increase to medium speed and mix until thoroughly combined, for another 1 to 2 minutes.
  • Add the vanilla extract and mix on low speed for about 30 seconds, until evenly distributed.
  • Gently fold in the whipped topping using a spoon or spatula until just combined, taking care to maintain lightness.
  • In a separate bowl, place the graham cracker crumbs. Scoop approximately a tablespoon of the cheesecake mixture, roll it into a ball, and coat it in the graham cracker crumbs.
  • Once all bites are shaped and coated, drizzle with chocolate or fruit toppings if desired.
  • Place the bites in the refrigerator for about an hour to chill and firm up.

Notes

Store in an airtight container in the refrigerator for up to 5 days. You can also freeze them for about a month. Consider adding lemon zest or using different cookie crumbs for variety.
