Instructions
 

Preparation

  • In a mixing bowl, combine rolled oats, peanut butter (or almond butter), honey (or maple syrup), powdered sugar, cinnamon, vanilla extract, and a pinch of salt. Stir until well blended and thick.
  • Prepare an 8x8-inch baking pan by lining it with parchment paper for easier removal. Spoon the oat mixture into the pan, spreading it evenly across the bottom. Press down firmly to ensure it holds together.
  • Let the mixture sit at room temperature for about 30 minutes, or refrigerate to speed up the firming process.

Glaze Preparation

  • In a small bowl, whisk together powdered sugar, milk, and vanilla extract until smooth. Adjust milk for desired glaze consistency.

Finishing

  • After the bars have set, carefully remove them from the pan. Use a sharp knife to slice them into desired sizes.
  • Drizzle or spread the glaze over the cut bars and allow it to set for a few minutes before serving.

Notes

Store bars in an airtight container at room temperature for a few days, in the fridge for up to a week, or freeze for three months. Adjust glaze ingredients gradually for your desired texture.
