Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and lightly grease a 9x13 inch baking dish.
  • In a medium mixing bowl, combine the 2 cups flour, powdered sugar, and ground cinnamon. Mix well, then add the softened butter and mix until crumbly.
  • Press the crumbly mixture into the bottom of the prepared baking dish.
  • Bake the crust for 15 to 20 minutes until lightly golden and set. Allow to cool slightly.

Cheesecake Layer

  • In a separate bowl, beat the softened cream cheese and 3/4 cup granulated sugar until smooth. Add eggs one at a time, mixing well after each, then stir in the vanilla extract.
  • Pour the cheesecake mixture over the cooled crust and spread evenly.

Crumble Topping

  • In a bowl, mix together the 1 1/2 cups of flour, light brown sugar, granulated sugar, cinnamon, nutmeg, and salt.
  • Pour the melted butter into the dry mixture and mix until larger crumbs form.
  • Sprinkle the crumble mixture generously over the peaches and cheesecake layer.

Baking

  • Bake for an additional 30-35 minutes until the topping is golden brown and the filling is set.
