Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine the granulated sugar and brown sugar, mixing well.
  • Add the creamy peanut butter to the sugars and combine thoroughly.
  • Crack in the egg and add the vanilla extract, stirring until the mixture is smooth.
  • Scoop portions of the dough (about the size of a tablespoon) and roll into balls.
  • Optionally, roll each dough ball in additional granulated sugar before placing them on a baking sheet.
  • Arrange the dough balls on the prepared baking sheet, leaving space between each.
  • Bake in the preheated oven for about 10 minutes or until they appear set and slightly golden.
  • Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

Ensure peanut butter is at room temperature for easier mixing. Avoid overbaking to maintain a chewy texture.
