Instructions
 

Preparation

  • In a mixing bowl, combine the room-temperature unsalted butter and creamy peanut butter. Mix until smooth.
  • Add the sourdough discard to the mixture and stir until smooth.

  • Crack the egg into the mixture, add vanilla extract, and mix until fully incorporated.
  • In a separate bowl, whisk together flour, baking soda, baking powder, and salt.
  • Gradually incorporate the dry ingredients into the wet mixture and stir until just combined.

Baking

  • Preheat your oven. Allow the cookie dough to rest while the oven warms.
  • Spoon the cookie dough onto a baking sheet lined with parchment paper, leaving space between each dollop.
