Ingredients
  

For the cake

  • 200 g unsalted butter adds moisture and richness
  • 200 g caster sugar provides sweetness and structure
  • 200 g self-raising flour helps the cake rise
  • 4 medium eggs binds the ingredients and adds moisture
  • 200 g raspberries adds tartness and moisture
  • 150 g white chocolate chips/chunks provides sweetness and texture

For the frosting

  • 125 g unsalted butter (room temp) adds creaminess to the frosting
  • 250 g icing sugar sweetens and thickens the frosting
  • 125 g white chocolate for frosting flavor

For garnish

  • freeze dried raspberries for garnish and color
  • white chocolate chips for garnish and texture

Instructions
 

Preparation

  • Preheat your oven to 180ºC (160ºC fan) and prepare a 2lb loaf tin by lining it with parchment paper.
  • In a mixing bowl, cream together the 200 g of unsalted butter and 200 g of caster sugar until you achieve a pale and fluffy texture.
  • Gradually incorporate the 200 g of self-raising flour and the 4 medium eggs into the mixture, mixing until you have a smooth, creamy consistency.
  • Gently fold in the 200 g of raspberries and 150 g of white chocolate pieces.

Baking

  • Transfer the batter into the prepared loaf tin and bake for 55 to 65 minutes.
  • Check doneness by inserting a skewer into the center of the cake; it should come out clean.
  • Allow the cake to rest in the tin for 10 minutes before transferring it to a wire rack to cool completely.

Frosting

  • Melt the 125 g of white chocolate and set it aside to cool slightly.
  • Beat the room-temperature 125 g of unsalted butter in a bowl until smooth.
  • Gradually add the 250 g of icing sugar to the softened butter, beating until you achieve a silky texture.
  • Pour the cooled, melted white chocolate into the buttercream mixture and whip until light and fluffy.

Decoration

  • Decorate the cooled cake with the buttercream using a piping bag, if desired.
  • Top with fresh raspberries, freeze-dried raspberries, and extra white chocolate chips before serving.

Notes

Ensure all ingredients are at room temperature for even mixing. Do not skip the cooling step to prevent breaking. Gently fold in raspberries to maintain their texture.
